My method for caramelizing onions, is to cook in a bit of oil until they soften and start to colour. Foodwise, the summer brings a bounty of fresh fruits and vegetables—one of my favorite is tomatoes. Place into the 400F oven and bake for 20 minutes.
Any type of tomato can be used. Line a baking tray with baking paper. Whisk egg yolk and milk in a small bowl.
Bake for 20-25 minutes or until tart is golden and tomato has softened. Ricotta Cheese: I always use full-fat dairy products, so I haven't tested this one with a lower-fat version.
